Guide for bakeries
Sell bread and bakes online
A bakery that sells online must be registered with Mattilsynet, and allergens must be on the product page before the customer pays. Fresh bread doesn't survive the post well, so most bakeries take orders online for collection, or deliver locally themselves. Cafés and shops that buy every day can set up standing orders.

What you need in place
- 1RegistrationAnyone making food to sell must register with Mattilsynet before starting. That includes home bakers: your kitchen has to suit what you make, and you need routines for hygiene and temperature. Mattilsynet offers free guidance to new food businesses.
- 2AllergensGluten, egg, milk, nuts and sesame are among the 14 allergens that must always be declared. In the ingredients list they have to stand out, in bold for example, and online the customer must be able to read them before buying.
- 3LabelsPre-packed bakes need, among other things, a name, ingredients, a date mark and your name, in Norwegian. Mattilsynet's starter pack has the full list.
- 4VATBread and baked goods carry 15% VAT. You register once sales pass NOK 50,000 in 12 months.
Collection, delivery and shipping
Fresh bread is best on the day. Most bakeries let customers order and pay online the day before and collect at the bakery. You know how much to bake, and waste goes down.
If you do your own deliveries, you can cover the local area. The post works for things that keep for a few days: crispbread, biscuits, granola and cookies.
Norway's cancellation rules have an exception for goods that spoil quickly. Read the Norwegian Consumer Authority's guidance before you write your terms of sale.
Cafés and shops
Cafés and shops that take bread every day shouldn't have to phone in their order. In the B2B portal they have their own prices and a standing order that's placed automatically. You approve it, and the invoice is created in your accounting software.
