What you need in place
- 1Registration or approvalA cheesemaker that sells directly to consumers registers with Mattilsynet. If you also supply shops and restaurants, registration still covers it while they are in your county or within 100 km and you deliver up to 600 kg a week on average. Sell more, further away or through a wholesaler, and you need approval. Mattilsynet explains the limits (in Norwegian).
- 2LabellingPre-packed cheese needs, among other things, a name, ingredients with milk highlighted, net weight, a date mark and storage instructions. Cheese made from raw milk must say so on the pack. Approved businesses show their approval number in an identification mark.
- 3Internal controlsYou need written routines for hygiene, temperature and sampling. Norsk Gardsost publishes industry guidelines for small cheesemakers that Mattilsynet refers to.
- 4VATCheese and other dairy products carry 15% VAT. You register once sales pass NOK 50,000 in 12 months.
Keeping it cold
Aged hard cheese copes with a couple of days in a well-insulated parcel. Fresh and soft cheeses need to stay chilled the whole way, so they suit collection or your own delivery.
Say on the product page how the cheese is shipped, and pick dispatch days that keep parcels from sitting over the weekend.
Delis and restaurants
Delis and restaurants nearby often buy the same cheeses every week. They order in the B2B portal at their prices, and you approve each order before it's packed.
